I am sharing an incredible recipe Karen Hakken sent my way.

Take a few of your favorite veggies (doesn't matter which ones), some salad dressing, and 1 chicken breast.
• Set oven to broil.
• Cut the chicken in half diagonally to ensure even cooking. Place on a very large sheet of tin foil.
• Cut your veggies. (I usually use 1/3 of a Vidalia onion cut in strips, 1/3 of a green pepper cut in strips, 1 branch of celery thinly chopped, and 1/4 of an apple thinly sliced, but you can use whatever veggies and fruits you like) Add all of your veggies on top of your chicken.
• Drizzle a small amount of your favorite non-creamy salad dressing or you can use spices, oil, and vinegar.
• Close up your tin foil into a fully enclosed packet.
• Broil for 10 minutes, flip your packet, broil for 10 more minutes, flip your packet again, and broil for yet another 10 more minutes.

Your chicken and veggies are done, and it will be the most succulent, moist chicken you've ever eaten at home. And when you eat it, remember, sometimes delicious food can also be well balanced and healthy.
